At less than $10 per serve, this delicious wonton soup is the perfect meal to cook for family and friends this Lunar New Year.
Serves 2. Double ingredients to serve 4.
INGREDIENTS:
- 1/2 small onion, finely chopped
- 1 thumb piece ginger, grated
- 1 garlic cloves, minced
- 1.5 tbsp red curry paste
- 2 cups chicken stock
- 1/2 can coconut milk
- 1/2 tbsp caster sugar
- 1/2 tbsp fish sauce
- Lime juice, to taste
- 2 serves frozen wontons (or dumplings)
- A bunch of Asian greens
- Spring onions
- Long red chilli, sliced
- Fried shallots
METHOD:
- Add onion, ginger and garlic to a pan and cook for 2–3 minutes
- Add the red curry paste and cook for a further minute
- Mix in the coconut milk, chicken stock, sugar, fish sauce and lime. Bring to aboil then reduce to simmer for 10 minutes.
- Boil wontons and Asian greens separately then transfer to serving bowls.
- Ladle over the hot soup then garnish with coriander, chopped chilli and fried shallots.
